It's to my understanding that ALSA is relatively low-level, and talks directly to the hardware, while PulseAudio sits on top of ALSA as a service. Additionally, it's to my understanding that ALSA is tied to Linux, but PulseAudio just acts as an abstraction layer on top of ALSA, and can work on other platforms.

Pulse is an audio server and does mixing, then outputs to Alsa. Without it or JACK you can have one audio source at a time. Alsa is a low level audio interface/driver system. It doesn’t do much more than outputting audio to the right card. Which can be enough for some uses, but most interactive systems have multiple potential audio sources.

To the OP - generally ALSA with dmix will just work, the only 'lack' compared to pulseaudio for normal usage is slightly more complex BT setup and no per-app volumes. Pulseaudio gives you that, and is generally easier to use IF IT WORKS FOR YOU for desktop usage. If you're not the standard desktop case, you wouldn't be asking anyway.

PulseAudio seems to be really CPU dependant - at least when it comes to certain programs. The dolphin-emu GameCube/Wii emulator was using 100% of my E8400 under pulse while the gameplay was slow with stuttering. Dumping pulse and using ALSA reduced the CPU usage to 80% with very smooth and fast gameplay.
