I use Quicktime Pro to open the file with multiple audio tracks and hit cmd+J. The screen that comes up shows each of the tracks in the Quicktime file. Click on the 2nd audio track and under one of the property tabs ("other" or "presentation" or something like that)you can choose a different language. Just pick one and save.

I encode everything for playback on my TV, as well as separate encodes for an ipod touch. Multiple subtitle and audio tracks are selectable from a menu on the TV. I can tell you the subtitles work fine as well on the ipod touch, but I haven't specifically tried multiple audio tracks on the touch.

Yes, the audio track will either tell you Dolby Atmos, or if it’s 5.1 or 7.1 audio it will say Multi Channel. Currently using the spatial audio with the AirPod Max and it is recognizing the Max’s.
