F3 to go to Cards mode, Enter and use the arrow keys or j/k to select the adequate output, probably Digital Stereo (HDMI) Output. If it does not work, double-check in F1 Output mode if the card is not muted (m to toggle mute state). Thanks a lot to user Quasímodo for this solution!

Just a heads up, WirePlumber from v0.4.7 can now disable any PipeWire devices or nodes. basically mean now I can disable NVIDIA's HDMI audio output easily, or any not use/unwanted input/output. I already updated WirePlumber wiki page about this, head there for more info.

My audio setup (under Windows) was - beside a headset for gaming - an external audio video receiver with a tv and a 5.1 system which was connected through HDMI to my AMD graphic card. This worked flawless in Windows and i could enable the av receiver at any time and it would switch to it for audio output (and use the tv as a second monitor).
