Audio Bitrate Quality Audio Bitrate Numbers (Average) Even if i set the Audio bitrate to "Lowest quality" it still gives a very high bitrate of 110Kbps. Which is not much less from normal quality at 128Kbps. Even 64Kbps sounds fine. Considering the limited amount of storage space in iPhones and iPods. Changing audio bitrate in the settings does not work.
Will ipod classic 160 GB play 24 Bit audi… - Apple Community

Yes, iPod does play 24 Bit audio at 48Khz, but only in the ALAC (Apple Lossless Audio Codec) format. Anything higher than 48Khz it does not play (well, I tried 96Khz and a message came up that it's not supported. I haven't tried 88Khz). I tried 24/48 WAV and the same comment came up. So only ALAC for 24 bit/48K on the iPod.

Let's plug in a headphone and see what happens: iPod Touch 5G Frequency Response, driving Ultrasone Edition 8 (32Ω).

As for the iPod thing not showing the bitrate, Apple once again does what Apple wants and makes the decision for the end user: somewhere down the line they had to make a decision to include that functionality and someone said "Why bother, everything on iTunes is 128 Kbps anyway, by default" and that pretty much became the reason why you can't actually see …

Do also bear in mind iPhone jack is said to have a bitrate support up to 24-bit/96kHz (Somewhere between lossless and High Resolution lossless) and fortunately ipod touch itself has a pure 3.5mm headphone jack, which expresses it would get the job done in my opinion.
