Hitting the -10dB on the microphone leaves much of the hiss remaining but cuts out birds, etc. It picks up barely anything then and a good deal of the hiss remains. Setting the gain in the 5D2 manual levels section to 25%, 50%, 75% or 95%, in every case I get tons of hiss.

For quiet venues I would suggest to using +20db on your mic and then use manual audio gain on the camera. Turn down the camera gain as low as possible and that should greatly reduce or eliminate your hiss problem. The 5d Mk III has a jack for headphone monitoring which makes it easy to quickly hear which settings will work best for you.
