You probably could use Cat5 for line-level audio. Doing it for unbalanced line-level audio over a significant distance wouldn't be a good idea - but you can get balanced line-drivers that won't have that problem. Or for short runs, you can make a lot of things work "well enough." Just keep it line level, that is, low current/low voltage.
