Neither the AD700 or AD900 need an amp. If you want the piece of mind of having one of the best unamped headphones get the AD900. If you want to save $100 and get similar performance get the AD700. With any headphone, and most other audio. You can't take a doubling of the $$ as being a corresponding doubling of the SQ. The 900 are better than the 700, but by how much is a subjective thing. Also, if you haven't got a decent source you won't get whatever extra money's worth there is in the 900, so better to stick with the 700.

First I just wanted to get something around $120 or so tops but then I start reading that the ad700's lack bass and the a900's have more....but are closed design and therefore not as good for gaming. So the next model up is the AD900's for $220 which has the strengths of both of the other 2 headphones.

From what I am reading, everything good about the AD700s (a lot: excellent positional audio, comfort, etc.) will be improved upon in the AD900s. Also, the AD700s are considerably cheaper than both of your initial options, so keep them in mind as well.
