HDMI is probably the only interface that can carry uncompressed /losslessly compressed 5.1 audio. Optical / Coaxial SPDIF can only carry lossy surround formats, i.e. DTS, Dolby Digital. If you can transcode your uncompressed 5.1 files to either of these then the optical out will work. Not sure about USB.

Just deactivate the SPDIF digital audio output on your laptop in Sound properties / Playback. It seems that iTunes automaticly takes the digital audio output when its activated, although you choosed HDMI as your default device and communication device. After deactivating it the sound is now transmitted over the HDMI cable and it works perfectly!!!

The only way you will get 5.1 from the Roku (and yes it does support Dolby Digital) is to connect it to an AVR via HDMI.
