I rip all my Blue-Rays and DVDs using the MKV.h.264.audiocopyprofile in DVDFAB, and select 2 pass for better visual. This preserves whatever audio format I select (DTS-HD, TrueHD, DD 5.1, etc.) usually in AC3 format, and produces an MKV file between 4 and 8 GB per movie (the better the sound, the bigger the file).
