    The easycaps sometimes come with an old version of Ulead Video Studio which will NOT work beyond XP. Also, why the mic socket ?. Even if the capture software is 'working' it probably does not see that input. Audio should go to the audio-in (pink) socket. If your laptop does not have one of those then you are shot.     The red/white RCA cables are the audio (left/right). The yellow RCA is the composite video input.
