One thing I take into consideration is whether the game allows different settings for audio and video delay. I play better when I'm able to set the video delay to 10 ms. Having the notes cross the strike line a little too far and still being playable is bothersome for me.

Watching a bit of that video, it suggests that RB has separate audio/video calibration settings. GH3 does not. Which, in my experience, means it's nearly impossible to adjust properly if you have both video and audio lag, of different durations. Basically you're hosed at that point, sell GH3 and buy some hookers and blow.
