I've used HandBrake app to convert some DVDs of mine to watch them on tv with Apple Tv. The format choosen for conversion is M4v and I was able to multiplex both english (2nd track) and italian (1st track) audio tracks inside the video stream. In iTunes no problem: I can switch between one and the other language just by using the on-play menu.
