Anyway, my setup is an ION with Win 7 x86 -- HDMI --> Sony STR-DN1000 receiver -- HDMI --> Sharp Aquos HDTV. The receiver has always been set to AMP mode, and when I change it to TV+AMP just to test, I see my speaker config drops to 2 channel stereo only, which makes sense. But back on AMP only, I do see 5.1 and 7.1 as options.

The HDMI bluray player or whatever can only put one kind of signal at a time over HDMI. It cannot put out multichannel and a stereo mixdown at the same time, AFAIK. SO if the TV's "demands" control the HDMI handshake, when the TV tells the device it's only stereo, the device will send a stereo signal.
