If you set the PS3 for 44.1/88.2/176.4 output for CDs, it will upsample them to the highest bitrate selected in the sound output settings. Maybe if you set it to that, but uncheck 5.1 and 7.1 88.2khz and 176.4khz, but check off 88.2 and/or 176.4 for stereo, it will output CDs in stereo since that's the only 88/176 option.

The ps3 is connected to my PC monitor through hdmi and boom, I play using my PC screen and output the sound through the Bose speakers.
