Do you have an M1 Mac Mini? I was going to suggest the same thing, but I actually can't say with certainty that multichannel is possible over HDMI - in fact, a cursory Google search suggests the contrary (there's a slightly cynical angle here that Apple would nerf the audio capabilities of the Mac Mini so that they can sell more Apple TVs).
