After updating, I noticed audio has stopped outputting through the Displayport to the speakers (which it has always been using the audio jack plugged into the monitor), and the only work around is to take the audio jack from the speakers out of the monitor and plug it directly to the MacBook Pro audio jack.

Assuming your TV is HDMI ARC capable (audio return channel), it can send its audio back to the device via HDMI (in theory). As you noticed, your adapter (if any at all) cannot receive/pass through this audio signal. AFAIK Macs can only receive HDMI Audio/Video via a USB grabber. - What comes to mind, is the optical out of your TV.
