I've also re-installed the latest Realtek High Definition Audio Codec from the realtek.com website, but it still doesn't show. I've done a clean boot. I've uninstalled all the audio drivers and restarted and it's still not there. Is there any other options you could suggest? My device is a Surface Pro 4 64-bit, and I'm on Windows 10 Pro.

Looks like you have four audio devices. hdaudio.sys and usbaudio.sys are the Microsoft class drivers for HD Audio and USB audio, respectively; they don't expose a stereo mix. I'm guessing the AMD driver is for the HDMI output on your video card, which can also carry audio. As this is digital, I wouldn't expect a stereo mix here either.
