I figured out a way to batch process whole directories to change the default tracks. MKVPropEdit is the command line tool required.

Instead, I'm using MKVToolNix to just remove the 5.1 audio track, which then allows Plex to default to the 7.1 file if you run the "Analyze" command. Very time consuming, but at least I'm paying it forward to anyone on my plex server who tries to watch it in the future.

Then try making the audio stream you wish to have as default one the first audio stream (MKVMergeGUI will let you re-order the streams). Save it as a new MKV. Try playing both MKVs with your media player.

There's a flag called "default track" flag. You can set it for the English audio track. Spec-compliant players should the prefer the English track over the other one. If that doesn't suffice, you'll have to switch the order of the tracks, too. In MKVToolNix GUI just drag & drop the English audio track before the other one.
