Beamer does the transcoding. iTunes does not so not only do software limitation apply but hardware too on the AppleTV. Airplay, depends on whether you are AirPlaying a specific piece of media (activated from the player) or AirPlay Mirroring (activated from Display Preferences or in the right of the menu bar in enable in Display Preferences for easy access).
