If you see that Plex Transcoder (or similar) is running heavily, then the issue is most likely that Plex is transcoding the 5.1 surround-sound audio to 2.0 stereo, and struggling to do so. You may want to try changing your bitrate settings in the Plex app (if that's even possible - I use Roku and it's a choice in the menu) to somewhat reduce the quality so that transcoding is easier.
