AAC is just another audio format like MP3. Games for the most part send their sound as either an uncompressed sound wave (called PCM) or using Dolby/DTS. AAC mostly just appears in music, so like L3379 said, it's for playing back music on the PS3 that you have in that format. As far as I know, AAC is not used in any game.

It can technically accept AAC 5.1 over bitstream, but almost no receiver supports AAC 5.1 natively, and if they do they downmix it to stereo AAC.
