If your Monitor can support Audio at all, the PS3 should be able to use that using HDMI. Not all monitors have Speakers and some that do are so bad that it's not worth using. You can buy cheaply adaptors that will convert a Stereo 3.5mm Jack to a Stereo RCA Pair. Most of the cables I've got was intended to plug a hi-fi equipment in to a computer.

Your ps3 comes with an AV cable like this, if you connect the 2 audio outputs (red and white) to an adapter like this you should be able to connect it to any headphones you like.
