I just read a bunch of sites, all pointing TOOOOOO if you are using HDMI (apparently this is best cause of the 8 channels instead of 2 with the Optical) then Linear PCM is the best way to go cause the PS3 does all the converting before sending the signal to the Receiver for true 5.1/7.1.

Those are the correct settings for 5.1 from digital optical which I still sometimes use. So I would check your receiver. Just to rule out something screwy, you might also change the settings on the PS3 to the analog multi-out cable (or any other option), and then switch it back to what you had before (optical, DD5.1 & DTS5.1).
