I am having the same findings! The PS3 will output my games in PCM preferentially over DD5.1! This is even though I have audio settings set to 'bitstream'. The only way to 'force' the PS3 to output in bitstream is to deselect all the PCM settings (that I can) from the audio settings menu. The PS3 will then output the game in bistream.
