The PS3 can downmix multi-channel digital audio to 2 channel and send it out to the DAC of your choice. But in my system, the downmixes generally sound crappy - not the quality of the sound, but the center channel gets so buried in the mix that it can get overwhelmed by other stuff in the mix, and I have to constantly fiddle with the volume.

There is currently no chapter or subtitle support on the PS3, multiple audio tracks are supported (on mp4s at least) however, and the PS3 will automatically downmix multi-channel aac audio to stereo if you deselect the aac option in your audio settings.

I used foobar2000 to convert the 5.1 audio to a format that Audition could read. Anyways, the result of this method was a truly excellent sounding downmix. With regards to Dolby recommending not including LFE in the downmix, from what I gather the reasoning behind this is it can increase dynamic range too much to be practical for movies.

If the source format is 7.1 (DTS-HD or Dolby True-HD or whatever) the PS3 audio framework will downmix this to 5.1 audio. If only 2 channel stereo output is available the PS3 will downmix to 2 channels (from both 5.1 and 7.1 audio) I don't think there will be a perceived loss of quality in this process. But I haven't verified in detail.
