Most of the PS3 games provide 7.1 sound and the Blu-ray discs pass through what's on the discs as full channel PCM sound. When using HDMI for audio as well as for video you want to select "PCM" as your audio choice. There's even a warning in the PS3 setup menu that if you choose "bitstream" you may not get all of the sound.
