The VOB files are 4GB plus in size, and hence why I have them on the PC rather than on an external USB drive connected to a PS3. When I use PS3 Media Server to play the films I have noticed that after about 1 hour or so the video and audio go out of sync. The audio stays at the current speed but the video seems to skip about.

First I'll start by saying I use my PS3 to connect to my Plex server (via wired LAN, so no internet or wireless issues could be to blame). Divx offers the best quality but I had audio/sync problems and stopped using it. Xvid is the default codec that works everywhere. But the quality is lower than h264 at the lower file sizes. My advice is record a small file using all 3 codecs (mkv also) then compare them. Also test them to see if they will stream to your mediaserver.
