First I'll start by saying I use my PS3 to connect to my Plex server (via wired LAN, so no internet or wireless issues could be to blame). I don't use the actual Plex app with the PS3, I just go through the PS3's media system to play my stuff. i had a problem previously with my audio and video being out of sync.

this in general is one issue i've seen before when streaming in general that i've never experienced with a bluray disc. i think i had some issues with amazon prime on my ps3 doing this as well, or it could have just been streaming to my ps3 and running ps media server on my computer. it's extremely annoying when it happens.

Especially good the ability to select the soundtrack from the VOB files either by directly selecting from the file list or by the language setting. I do have a problem with the sound though. It is okay for about 8-10 min, but then it goes out of sync with the video and there are a lot of dropout in the sound. The video also gets a bit jerky.
