I'm using HDMI for video to the projector, and the sound is routed through the console's Multi-AV cable to my sound card. I haven't tested it but according to the PS3's menus, sound is sent via all outputs at the same time - the one you've selected as primary receives surround (if possible), and all others are down-mixed to 2ch stereo.

All these settings are on the ps3. Scratch that. I just saw a picture of the back of your projector. The vga has no audio input. The red and white connections only work with the yellow video input on this projector. So either connect your ps3 with red white and yellow or get some kind of audio system and connect red and whites from ps3 to that. 2.
