Go to audio settings and select digital out optical. You can't ouput via hdmi and optical at the same time, so if you want to change back to the tv sound for any reason you'll have to go back into the settings.

Turns out, on the TV there is a setting under: Menu -> Sound -> Additional Settings -> SPDIF Output -> Audio Delay. This 'Audio Delay' option was set to 30. I set it to 0 and both the playstation and the xbox were then able to use the TV as an HDMI audio output.
