In case you aren't using those, you can use start-pulseaudio-x11 command. Just add it to your DE/WM autostart. Plain pulseaudio --start will also work. To stop PA use pulseaudio --kill command. Be warned, that if you didn't disable autospawning, it'll respawn as soon as some application requires the sound.

I have a Raspberry Pi 2 running the latest Raspbian jessie. I have sound working just fine via ALSA and analog out. Recently I installed pulseaudio and have found if pulseaudio is running I no longer have any sound. If I do a killall pulseaudio then I once again have sound (provided I restart the process which is attempting to output sound).

Then on the Output Devices tab, you should have available something like HDMI/DisplayPort. Click on the check mark next to this selection to set it as default.
