Same issue as John N, trying to get SPDIF working on a Zotac box, using Ubuntu 14.10. I walked through the same steps, and got 5.1 channel sound selected, but when trying to play videos without pavucontrol open the videos would freeze and the AV receiver would show intermittent signal being received.

On Pulseaudio, my only choice for Digital Output is Digital stereo(IEC958) which works great in stereo but my receiver doesn't recognize the signal as DD or DTS and switch to "fake" 5.1. So browsing thru aptitude I found the 'libasound2-plugins-extra' package which have "a52: S16 to A52 stream converter" inside, installed it but still no luck.
