The audio out of the Pi is pretty poor in general. I think it is best to use either a USB sound card, or a GPIO header sound card like one of these. The reason is that the audio codecs which they use are far more linear then a pulse width modulation (PWM) strategy which the Pi uses. This linearity implies much better sound quality.

The Pi's 1/8 inch audio out jack is powered by an 11 bit DAC. The audio degradation when using software to reduce the volume is a direct result of this. Besides this, it has a background hiss, and it crackles. HDMI is a different story. HDMI uses the DAC in the TV or amplifier. The hiss that you are getting is coming from your TV, not the Pi.
