When I load a movie into RipBot264 I have the audio stream options WAVE, FLAC and CORE. With 5.1 channel audio I normally select CORE, then on the next screen under PROFILE I select X.X COPY STREAM. I believe this muxes the DTS stream into the mkv file untouched (please correct me if I'm wrong). I have a blu-ray movie with 7.1 channel DTS audio.

In demux mode the track remains intact as it has to be, but in "wav" and "flac" modes RipBot264 downmix. Then the way is to do the conversion on the outside using eac3to, 7.1 source to a 7.1 WAV file.
