If you want *multiple audio streams*, then you should use MKV instead of AVI, mainly because MKV is a more modern container whose multiple-audio-track support is basically guaranteed among players. Using an MKV muxer is *good*. If you want to go with AVI, use AVI-Mux GUI to do the muxing as guns1inger suggested.
