Hey there Mongoose! Unless I'm very mistaken, the 5.1 sound should go fine through HDMI only. I believe the audio settings in xbox saying "digital output requires an optical audio cable" is referring to if you're using component cables, not HDMI. The best thing to do would be to try it and see what results you get.

You need to plug the HDMI into the receiver to get the 5.1 as most (all?) TVs won't send multichannel audio from HDMI to optical. Do this: 360 -- (HDMI)--> Receiver -- (HDMI)--> TV Otherwise if you don't have a receiver that handles HDMI then get the 360 cable that lets you use optical and HDMI.
