Currently run an original 20Gig 360 and it's connected to the screen via VGA, and the VGA cable has a breakout for SPDIF which I run to a surround system. The surround system cannot take HDMI, it's SPDIF or COAX for digital audio.

Have you tried resetting the video / audio settings on the Xbox? If not try doing this. Turn off the console and restart it using the controller. Pull the RCA end apart so it can plug in with the HDMI cable plugged in. Then go into your Xbox Settings - Console settings - Audio Digital... select the first/top option. The bottom 2 options send audio into the HDMI cable and the causes a conflict/crash/reboot. Select the top option and that activates the use of the red/white RCA cable for use.
