Hey there Mongoose! Unless I'm very mistaken, the 5.1 sound should go fine through HDMI only. I believe the audio settings in xbox saying "digital output requires an optical audio cable" is referring to if you're using component cables, not HDMI. The best thing to do would be to try it and see what results you get.

As far as I understand, the 360 only accepts 2 channel audio in a stream. Unless that audio is a specific Windows codec. One of the variants of WMA I believe. With this in mind, I am wondering: Does the Xbox 360 downmix a 5.1 signal to 2.1 when using Digital Stereo? Or, does it continue to send a 5.1 stream, with only 2 (of the 5) channels containing audio?
