HDMI will use DD 5.1 if the 'receiver' supports it or switch to stereo audio on the HDMI when the 'receiver' doesn't support Dolby Digital. The result of turning on the Surround Sound (Beta) choice is that the freezes still happen but are greatly reduced in frequency--perhaps to the point where I can 'ignore' them.

If you set the Xbox Series X to 4k 120fps AND have Bitstream set to Atmos or DTX-X, audio will drop out ever 2 seconds, like a record skipping. Dropping down to 60fps fixed the issue. Leaving it at 120fps but dropping the bitstream also fixes the issue.
