Pulseaudio Volume Control does give finer control and allows the selection of input and output devices. It is part of the Xfce spin live cd but, like a number of system tools, not included with the desktop. You can easily install it with (as root or with sudo if it is set up) 'yum instal pavucontrol'.

In Xfce4.10 on the panel I put the Indicator Applet. It always showed me the volume control and network icons. I'm using XFCE with xfce4-pulseaudio-plugin. Also i have set up some keyboard shorcuts for Volume Up and Volume Down. The issue is that there is no notification displayed when changing the volume using the keys. Note that a notification is displayed in case the volume is changed by using the xfce pulseaudio icon.
